  • making easy Shrimp with Tomato, Spinach and Feta

    Shrimp with Feta Tomato Spinach Garlic

    2 tbsp olive oil heating in a medium sized sauce pan, than add: 2 chopped roma tomatoes - cook over medium-high heat until softened Stir in: 2 cloves of garlic (chopped) 1 bay leaf salt and pepper to taste fresh baby spinach leaves (whole) to taste (I used 2 handfuls) When the spinach has wilted/cooked into the mixture, add 12-15 large shrimp and continue to cook until shrimp are cooked (fresh shrimp) or hot (pre-cooked). Pour over: 3 tbsp feta – broken up into large chunks and spread across serving dish Alternately: you could bbq the shrimp and pour the tomato mixture over the shrimp and the feta in a bowl. Serve with: slice baguette (yummy dipping potential), pasta or rice (or just eat it by itself!). adapted from the baked Feta and Shrimp recipe #59736 at food.com

    I’m a busy bee but I’m trying to avoid becoming this poor moth, who can only enjoy this beautiful garden from the other side of the glass. I just celebrated the one year anniversary of my business (and by celebrate, I mean I just worked right through it…). I love that the nature of my work keeps me on a non-stop ride on a learning curve. I also love the freedom to shut my laptop and run outside and enjoy the sunshine with my kids (after all, I can work when they are in bed!). So I guess this blog post is my quiet celebration of this crazy year (woo hoo, me!), a few moments taken from a busy work day to look out the window and be grateful for this sunny day, my husband, my little girls, my mom, my mentors and advisors, and my friends (and the people who hired me!)
