New recipe invented, no picture yet (we ate the whole thing before I remembered my camera). Details haven’t been nailed down yet, so I’m not submitting it to Recipezaar yet. I was so excited that I had to write about it now (also, good to do it now before I forget because I am still operating on about 3 hours of sleep a night).
1 package ground turkey
Mixed with (guessing here) 1/2 cup bread crumbs, 1/4 cup ketchup, 1/4 cup pasta sauce, pepper, salt (probably not really necessary), sage, thyme, crushed garlic.
Line a loaf pan with 4 strips of bacon (lengthwise). My bacon was very long and went up both sides of the pan and curled over the top of the meatloaf.
Press in half of turkey mixture.
Place sticks of sharp, aged cheddar cheese along the center (leave room on each end for turkey mixture, you don’t want the cheese to leak out). I used the equivalent size of 4 cheese strings (if you’re a mom, you will understand this measurement!)
Add the rest of the turkey mixture, press down firmly (but not so firm that you are displacing the cheese).
Fold down ends of bacon onto top of loaf (if necessary).
Pour 1/2 cup of pasta sauce on top, spread evenly.
Bake at 350 degrees for one hour.
